 In Defense of Food: An Eater's Manifesto, Author Michael Pollan takes a stand against "nutritionism," the practice of forcing nutrients into food to make new "food-like substances." Pollan insists that manufactured food causes huge health problems like diabetes and obesity. He points out that, before there was processed food, people ate lots of natural food for thousands of years. Since Mother Nature does tend to provide the right stuff, maybe we don't need expert help after all.
Pollan's overall cure for the American diet? A return to the eating habits of our great-grandparents, who knew nothing of processed food and sugar substitutes. He'd like us to sit together and enjoy some real food. But not too much. And yes, mostly plants.
The author of several award-winning bestsellers on food and culture, Pollan is also the Knight Professor of Science and Environmental Journalism at UC Berkeley.
