Fresh coffee ain't the Italian way
I have an Italian friend who thinks Blue Bottle is a joke. They have this rule where they won't sell their microroasted batches of coffee outside of 48 hours after it's been roasted. He may have a point. No one in Italy has ever heard of that and maybe for good reason.
However, I love this coffee. It's become very hip to like it, though, and so every cool new place in town is beginning to serve it. It's definitely potent and I can taste a ton of flavors in it. It's smooth and has a tiny bit of a bite, but mostly smooth. It goes down easy. Chez Panisse serves it, Zuni serves it, Bar Tartine serves it. A couple of guys started this company in a house in Oakland a few years back. A severely fresh cup of coffee, from a time-sensitive microroast point of view, may not be the Italian way (and believe me, I love the Italian way), but here in the ever-innovative Bay Area it's definitely an interesting (and delicious and very expensive at $20 per lb) coffee.
