Charlie Cascio, who for several years ran the Esalen Kitchen in Big Sur, gathered recipes and wrote this wonderful little cookbook. The recipes are very well thought out, reduced in size for the small table rather than 250 guests. The recipes in here rock. They're organic, don't use much sugar or oil. They're hearty and many have been developed over years and years. You can get this beautiful book at many bookstores or online. From the Esalen granola recipe to Maggie's kale salad to Johnny B's pancakes to Bill's Texan buttermilk biscuits, there's more than one or two gems here.
