Kefir "grains"?

And I thought kefir was just liquid yogurt...

A question that occurred to me after reading this article. Is it possible to re-use the grains used to make kefir? Does this require continuous production or is there a way to store the grains between batches? (I used to freeze my sourdough starter between loaves.)

You re-use the kefir grains and they never need to be replaced with proper care. You can produce kefir each day OR you can rest the grains in milk in the fridge for up to 7 days. For longer storage you may freeze them in dried milk or you may dehydrate them for later use.
