Beets contain high amounts of vitamin C. They are also high in folate, soluble and insoluble dietary fibre and antioxidants. Also, according to Wikipedia, "Beetroots are rich in the nutrient betaine. Betaine supplements, manufactured as a byproduct of sugar beet processing, are prescribed to lower potentially toxic levels of homocysteine (Hcy), a naturally occurring amino acid that can be harmful to blood vessels thereby contributing to the development of heart disease, stroke, and peripheral vascular disease." I love them for their bright color, sweet taste, and unmistakeable soft and tender texture. They are delicious with spinach and goat cheese, and a bowl full of borshct is always a treat. The beet is definitely on.
