This book explains how our body works in digesting sugars. It's a quick read, with great diagrams, and if you have been on diets your whole life like me, you'll be glad to finally understand your body's insulin response. By reading this book, you will discover that the "white foods" are pretty bad for you in terms of weight gain, diabetes, and cholesterol (white flour, white sugar, processed salt, white potatoes, etc.) More than that, though, you'll understand that all sugars are not created equal, like all fats aren't created equal (see my reviews on grass fed steaks, Prather Ranch, and Organic Raw Milk from grass fed cows). I've learned to exchange processed sugar for whole food sugars like raw honey, agave nectar, and other more complex sugars that take longer to breakdown in the body and carry with them more nutrient dense vitamins and minerals. It is helpful for people to understand how the glycemic index works because it will enable you to make better decisions for your health.
