Review of Organic Raw Kombucha by GT'S Kombucha

Okay... So I've tried it a few times, like it, but find it a bit expensive. I understand that it is organic. What I don't understand is how it is 'raw.' Sugar? Heat? And some say that if you use organic teas, that the scoby will mold. Hmm. Will someone clarify this for me?
