Gluten free chocolate cake mix.
BuyI was so excited to try this cake after reading the reviews and was greatly disappointed. I followed the directions, mixing well, and the cake took longer to bake than the instructions indicated. The cake has a gritty texture and sort of a stale aftertaste. It definitely lacks rich chocolate flavor. ** A suggestion for anyone looking for an excellent gluten free chocolate cake... Pamela's Products is one to rave about, no one else would know it's gluten free.

Being a bit leery of gluten-free products' taste- yes, we all know they're GOOD for us, but good and good-tasting are all too often different things!- I did a bit of research on some websites. First I checked namastefoods.com site. The mixes looked eco-friendly, their website was informative and easy to navigate, but I wanted to hear some more actual customer's opinions. After reading one stellar review after another, I figured what the heck, and splurged on everything chocolate and/or decadent they had.
The price at first glance wasn't all that impressive, but after looking at the yield, I realized why- you got WAY more bang for your buck! And it was impressive that they used a "dedicated allergen-free" manufacturing plant. No hidden contamination, in other words.
So I thought I'd start with a chocolate cake. Instead of making it exactly as the package directed, as I live at a somewhat high altitude, I consulted their website's FAQ's and decided on the directive of reducing the oil and/or water, then adding another egg. We all know how tricky gluten-free baking can be, having to keep the cell walls strong and all. But with 1/3 less oil (an entire cup seemed an awful lot anyway!) and one extra egg, forty minutes later my two 9-in rounds looked and smelled delicious, and the toothpick came out clean as could be. Cooled, decorated, and served, I just HAD to write a review, as I have never had such a success at this type of cake. WOW! is all anyone could say between bites- they were moist, chocolately, and if I hadn't known better, would've sworn they were regular chocolate cakes. YUMMY!
Since then, I buy from their website anything and everything they have to offer. Again, WOW!

When I made this mix, I used oil and eggs exactly as suggested on the box. The only thing tricky was trying to determine when it was done, it's a very dense, sticky mixture that I didn't want to overbake.
Now for the important question - how did it taste? When you consider that I served it to people who had no idea they were eating something that was gluten free, it got reasonably high marks. No one called it a bad cake, neither did anyone rave about it. "On the sweet side" was one remark, along with a few comments about a different texture, but mostly people noticed really good chocolate.
I'll probably try other gluten free cake mixes, but I might end up back at Namaste.

A funny story about this cake mix -- my son's 1st grade class has a few kids with food allergies, including one of his best friends. For my son's birthday, my wife decided to make allergen-free cupcakes to take to class. She used the Namaste Chocolate Cake mix, Earth Balance Natural Buttery Sticks, Ener-G Egg Replacer, and Cherrybrook Kitchen Chocolate Frosting. She put them in the oven, and I took them out out after the recommended cook time, but they were just too gooey, so I put them back in. They ended up being in about twice as long as recommended, and they all had craters in the middle (egg substitute doesn't work so well). By then, they were still a little gooey in the (cratered) middle, and crispy on the edges. I frosted them anyway, but then suggested to my wife that we not even take them in because none of the kids would actually eat them.
When my wife went to pick up my son the next day, his allergic best friend stopped my mom and told her they were the best cupcakes he had ever had! He has since hounded his mom to get the recipe from us. My son said that only a couple of his classmates didn't eat theirs -- everyone else ate them! I was surprised, but I'm not gonna argue with a group of 1st graders!
When I tried one, they were actually pretty good. They were a bit gummy, but my son said he liked them that way.
