pastry discovery

this is a creation of my own. it was pretty hard at first with all the convertions that was made in the process. but the end result was a combination of rice and spelt flours and yeast of course. an in the wet mix was melted earth balance, multi grain milk and egg replacer. the icing was even more difficult. but plain tofu cream cheese along with lemon vanilla extract and more earth and multigrain milk not to forget real frutose for those diabetics. the lightness of texture and the overwhelming aroma and flavor truly surpass any conventional cinnamon roll ever produced by a major corporation. chef/baker. dennis e pate iv rainbow whole foods jackson ms 2000-2006
