L' Chepeau Organic Soy Sauce is good, but the nickname El Cheapo Soy Sauce is very ironic

This organic soy sauce has an interesting history. It originated in France, but is now available only in Dubai. It's incredibly expensive. Unlike wine which can have all kinds of premium varieties and such, soy sauce pretty much tastes salty...or so I thought. This really does taste flavorful, but it's ridiculous how expensive it is.

I'd rather buy Kikkoman low sodium and spend the extra money on some organic wine or nice sushi. While I was in Dubai I was able to tour the plant and discover how organic soy sauce is made. It really just comes down to organic soy beans, organic wheat, sea salt and the koji (mold). It's brewed, fermented and pasteurized to avoid using MSG or other preservatives. Homemade soy sauce is possible, but making soy sauce yourself is really hard due to the delicate nature of Koji (mold). It's more difficult than brewing beer.
