Kale Recipe

Kale is a great veggie - it's versatile and nutritious. When you buy kale, you should make sure there are no holes or yellowing. The kale should have a rich dark color, and the stems could be moist and hardy. Don't wash it before you store it or it will go limp on you.
Kale is a pretty hardy leaf veggie -- that means you can cook it a bit without it turning completely to mush like more delicate greens. One of my favorite ways of preparing kale is pretty easy:
Ingredients
- 1 bunch of chard, cleaned, trimmed and sliced into 1" strips
- 1 red onion sliced into thin crescents
- 2-3 Tb olive or sesame oil
Combine in a bowl & set aside:
- 2 Tb sugar
- 2 Tb soy
- 2 Tb sake or mirin
- pinch of salt
- raw cashews
Directions
- Dry toast the cashews in the skillet and set aside.
- Put half the oil and the onions in the skillet & cook med-high until the onions start to carmelize.
- Add the rest of the oil and the kale and toss until the chard starts to wilt.
- Whisk the remaining ingredients and add to the kale & onions, sprinkle the cashews and toss until the liquid cooks down and evenly covers the kale.
- Don't let the kale get over cooked.
You can vary this by adding some mushrooms and some red pepper flakes - very delicious and quick.

Even my junk food friends like kale
I was introduced to kale not that long ago. I was attracted to it because I have high cholesterol and it just looked so amazingly healthy and I was curious. I saw my coworker eating it with something that smelled like soy sauce (I'm japanese) and so I figured I'd buy it and try it the next time I went to the market. I bought an organic bunch of kale, steamed it and poured some soy sauce on it. It was OK, felt healthy. Then I tried it in this salad while I was at Esalen and needed to have it again. I made it twice for friends and both times was asked for the recipe: equal parts olive oil, soy sauce or braggs) and lemon juice for the dressing. destemed, well washed kale leaves, sunflower seeds, pumpkin seeds, an avocado, red onion and add shitakes if you have any around. massage the kale with your hands so that all of the kale is in the dressing to help soften it. I'm telling you, it's a hit and it's healthy, organic and natural!

I wash and shred 1 huge organic bunch of kale and run it through my salad spinner to get the moisture off.
4 oz grass fed beef chorizo (I live near a very cool farmer's market. Regular chorizo will do, I suppose) in a very hot stock pot. I cook it so that it comes apart in crumbles. toss in the kale until and stir it around until the kale is wilted and dark. Add 2 TB dried thyme and 2 -16 oz cans of drained and rinse canallini beans. I stir it all around until the whole thing is hot and thick then add water just under the top of the veggies. Simmer 20 minutes to let the beans really take on some flavor. it's awesome soup. It's nice with a little sustainable Parmesan cheese sprinkled on top.

1 large bunch Kale, 4 cups chopped, pressed firm
4 cups Yam, rinsed well, chopped
1.5 tablespoon Olive Oil
2 cup Purple cabbage, sliced
1.5 cup Onion, chopped
3 tablespoon Soy Sauce
2 tablespoon Salt, or to taste
1 tablespoon minced Garlic
1 tablespoon Ginger, peeled and minced
1 teaspoon Serrano Chile, seeded and diced
Hot Sauce, to taste
Rinse and drain kale well. Steam kale and yams. Kale should still be colorful and yams should still have some firmness.
While kale and yams are steaming, place oil in a large sauté pan and heat on medium high. Add onion, garlic, ginger and chili pepper, cook for 5 minutes, stirring frequently.
Add cabbage and cook for 5 minutes, stirring frequently. Add small amounts of water if necessary to prevent sticking. Place in a large mixing bowl with remaining ingredients, add kale and mix well.
Add yams and gently mix well. Enjoy!
