Satisfying box cake mix
My Green Zebra coupon book offered me a discount on this cake mix so I gave it a try - I made the marble cake as a sheet and brought it in, unfrosted, to the office. Though it was cut into small cubes, it was gone very quickly.
The cake came out quite nicely -- it was spongy, soft, light -- not too sweet, not dense. It had a really nice cake-y quality. I have to confess -- I didn't use eggs, but used Ener-G egg replacer and I also threw in some Xocolatl powder into the chocolate part of the cake to give it some kick. I usually modify box mixes -- I always consider them as the "base" of whatever it is I am doing.
This came out quite well and I think that my office mates would agree! Yum.

This cake mix seemed good in theory and tasted okay, but overall was a disappointment when compared to either cake from scratch or other boxed cake mixes. The mix, which claimed to make two 8-9 inch round cakes, barely made one 8 inch cake. When we cut into it, it was flavorful, but dry and spongy and forgettable. Not the decadent indulgence you hope for when you bake a cake for guests.
