Cornification
I've been a fan of author Michael Pollan for a number of years. Have you read his book "Botany of Desire"? It was terrific listening to the replay of Alternative Radio's Program featuring Pollan's presentation of the "The Cornification of Food" (May 11, 2006). I highly recommend you order the CD online for $15, plus $1 shipping.
Pollan not only describes corn as the "elephant" inside our food system, but how corn production and the manufacturing of corn by-products are consuming vast amounts of our precious, and limited fossil fuel energy resources, destroying the livelihoods of millions of farmers, and contributing to our modern epidemic of obesity. We have become "People of the Corn"...If you've got an ear to hear, you've got to listen for yourself.
