Gluten-Free Maximus

I carried it around half a day in my bag, so I could enjoy it while taking in the view from OHSU. Even so, my gluten-free brownie was incredibly moist and oozing with chocolate. I discovered Chris and Teresa's New Cascadia Traditional™ baked goods at the Saturday Farmers Market near Portland State University.

Chris and Teresa are the master gluten-free artisans that provide Portlandians with their New Cascadia Traditional™ gluten-free hand-crafted breads, pastries, gourmet cookies and brownies (a category all of its own, in my cookbook). In talking to Chris, I learned that they hope to open their own bakery/cafe in the somewhat near future. Until then, you will find this artisan duo selling their specialty items at several Farmers Market, and like me, discover a number of local restaurants that have a standing order for their gluten-free baked goods.

While strolling the Hawthorne district, I came across the Oasis Cafe (oasispizza.com), located across the street from the old Baghdad Theater, which advertises with a bright yellow banner "Gluten-Free Pizza". Bingo! After an incredible brunch, late afternoon was the perfect moment to satisfy my long-over due craving for pizza, really good pizza with a glass of red wine, while sitting outdoors, people watching. And guess whose pizza dough they used for building my "Create Your Own" pizza to order? Right. New Cascadia Traditional's pizza dough. Despite the fact that Oasis Cafe doesn't advertise this "bite" of good news for "gluten-intolerants" on their website, Oasis seem to have a fair number of requests.

Chris rightfully bragged that he believes New Cascadia Traditional™ makes the best gluten-free pizza dough in the country, if not the world! He has my ***** vote! I give a way thumbs up for Oasis Cafe's gluten-free pizza, too.
