Nutty Low Gluten Grain

Farro (aka emmer) is an ancient grain that was at one time was very abundant, but is not very common now. It is a type of wheat that contains a lower amount of gluten. It's often used in Italian soups or pasta. I ate it with steamed eggplant and salad. It has a soft texture and buttery, nutty flavor. I was excited to try a new grain. I would definitely eat this again.
