Organic Mint Jelly for Conscious Carnivores

For Easter, I roast a range-fed leg of lamb from a sheep raised by friends of ours, and range-fed. I insert slivers of garlic, and rub it all over with a high quality olive oil, Herbs of Provence, fresh mint, French sea salt, coarse-ground pepper and lemon zest. My platter of carved, medium-rare lamb is garnished with sprigs of fresh mint and served with a condiment, made to perfection: Tracklements' (gluten-free, organic) Mint Jelly. The list of organic ingredients include raw cane sugar, cider vinegar, citrus pectin, mint, and lemon juice. Tracklements Mint Jelly has just the right balance of sweetness and tang, with a fresh mint flavor. You actually see the small flecks of mint throughout the palest of green, transparent jelly. It's nothing like Smuckers! Mint jelly is also great on buttered toast, with cream cheese and bagels or crackers, and as a glaze for vegetables such as carrots, peas and potatoes.
