My favorite soup in a box
I love tomato soup, but never realized how much better, sweeter this soup would be, thanks to the roasted red peppers. It's organic, and creamy but dairy-free, low calorie and so very tasty! Pacific also has a new low-sodium version of this soup out now. It's a convenient size for about 3 servings, for lunch at work. A great treat is to break small pieces of cheese into it, which will melt when heated, yum! I've also added this to a homemade pasta sauce to great success. I'm not sure the waxed (?) box is sustainable, but it is convenient to carry in my backpack, however can it be recycled?
