Rich & robust soy sauce

For foods that are super concentrated - like soy sauce - I prefer to go organic. I figure, there's more of whatever's in there in smaller amounts and I don't want to be eating junk. Soy sauce is used to add saltiness to sauces and dishes in Japanese cooking. A typical sauce is something like this: 2 Tbsp soy, 2 Tbsp mirin or sake, 2 Tbsp sugar -- mix it all together, then put it on your veggies to simmer down and caramelize a bit. Throw on some toasted sesame seeds or maybe add a bit of grated ginger and you've made Japanese homestyle veggies. This works really great with asparagus if you saute to bright green and then poach it in this sauce until they soften a bit.

It's difficult to replace soy sauce, so go organic if you can. San J is naturally brewed and fermented. It's totally organic and doesn't have all of the sugar and MSG that some soy sauces have. It's still heavy in salt content, though less as well than your typical name brand. And it tastes crisper and more robust, I'll admit.
