By now, most people have heard about the problems associated with using synthetic sweeteners -- neotame, aspartame (NutraSweet, Equal), sucralose (Splenda), acesulfame-k (Sunette, Sweet-n-Safe, Sweet One). Saccharin should only be used as a "transitional" sweetener -- with the transition being toward minimally processed sweeteners.
Sucanat is a minimally processed sweetener -- it basically is cane syrup that's been dehydrated and broken up into crystals. The name is a contraction of "Sugar Cane Natural." it is brown because it still has the full molasses content and flavor.
Sucanat is still sugar but contains nutrients that are not present in highly processed white sugar. Sucanat is known by another name - "jaggery" - and is also available in Indian grocery stores where it's a lot cheaper but not likely organic.
Sucanat is also a great substitute for brown sugar -- brown sugar is usually white sugar with molasses mixed back into it. Just be careful to adjust for moisture in your baking recipes when you use it. I find that sucanat is also great when I'm in a hurry to caramelize some onions -- just sprinkling 1/4 tsp of sucanat does wonders and the onions turn out great.

Wholesome Sweeteners is a great company to support. They use the sugar cane as their power, they grow organic, and this stuff is healthier than sugar. It's not nearly as processed - which also means it doesn't dissolve like granulated sugar would.

Sucanat is actually sugar cane, but it's been crushed, squeezed, and brought down to an oozing syrup that's then paddled. It's a great substitute for sugar, because it hasn't been refined. It's kind of molasses-y. Wholesome Sweeteners has great products. This is organic and fair trade. Even their mill is completely energy self-sufficient. Their sugar cane is hand cut without sprays!
