Almost as good as making it yourself!

Almond milk is incredibly easy to make yourself -- it just requires soaking a cup of almonds for an hour (or overnight), then you throw them in a blender with water and filter out the almond meal. You can easily get a quart from half a cup of almonds -- and you know it's just pure, raw almond milk with no added preservatives or a non-recyclable aseptic container.

That said - I'm often lazy and don't make my own almond milk all the time. I do buy Pacific Foods almond milk as my staple beverage and cooking ingredient (it's great for chai) and was very happy to see an organic version on the shelf. Now if only we could get Trader Joe's to carry it (they charge $1 less per carton than Whole Foods or Rainbow Grocery).

yummy and now, organic

I just saw these on the shelves, finally an organic version. If you don't want dairy, aren't sure about soy anymore, nut and hemp milks are a great option. I rotate the almond, oat and help milks in my smoothies. This is also gluten-, wheat-, casein-, and yeast-free. It is low fat, low sodium and vegan. Enjoy!
