Recipe for Cranberry-Orange Bread

I adore cranberries - juice, dried or in baked goods. Cranberries are a natural antibiotic and have many nutritional benefits.
Cranberries can:
- Improve the body's circulatory system.
- A daily glass of cranberry juice will treat diseases like cystitis.
- Provide relief for asthma patients.
- Condensed tannins in cranberries can inhibit the oxidation of bad cholesterol and as a result protects body against atheroscelrosis.
- Tannins are also considered an important contributor to a healthy heart.
- Acts as bactericide and affects the acidity of the urine. In effect, it disrupts the development of kidney stone formation.
I always buy a few extra bags of fresh cranberries when they are available in the fall to freeze for use later in the spring. My favorite treat is cranberry orange bread -- I like to bake it in mini loaves and freeze it. Quick breads freeze well -- so you can give away or keep extras as you want.
Cranberry-Orange Bread
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 teaspoon salt
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 tblsp vegetable oil
- hot water
- 1/2 cup unsweetened orange juice
- 1/2 tblsp orange peel, grated
- Ener-G Egg Replacer for 1 egg
- 1 cup cranberries (fresh or frozen)
- 1/2 cup walnuts, chopped (optional)
Directions
- Preheat oven at 375 F.
- Grease and flour loaf pan or lightly oil the pan and line with parchment paper.
- In a large bowl, mix dry ingredients (flour, vegan sugar, salt, baking powder and baking soda).
- In a small bowl, add walnuts, cranberries and 1/2 cup of dry mixture to coat the nuts and berries.
- In a measuring cup, add oil and top-up with hot water to make 3/4 cup.
- In a medium bowl, mix oil/water mixture, orange juice, orange peel and Ener-G Egg Replacer.
- Combine liquid mixture to dry mixture (don't overmix!). Fold in nuts and berries.
- Bake for 1 hour.
