Recipe for Feta Shrimp

Whether you serve this shrimp atop a salad or as kebobs with couscous, polenta, rice pilaf or quinoa, this scrumptious shrimp dish is sure to please your summer appetite for easy to fix meals that are simple to grill.

Grilled Feta-Shrimp

Ingredients

2 lbs Shrimp - large, peeled and deveined (32-40)

1/3 cup Lemon Juice, fresh

1/4 cup Olive Oil

1 Tbsp Rosemary, chopped

2 tsp Oregano, dried

3 Garlic Cloves, minced

1 tsp Salt, kosher

1/2 tsp Red Pepper, flakes

1 Lemon, cut into wedges

1/2 Feta Cheese, crumbled

Directions

  1. Place the cleaned and prepared shrimp in a reusable container (with lid). Add lemon juice, olive oil, rosemary, red pepper flakes, oregano, minced garlic and salt. Turn to coat. Marinate in the refrigerator for about an hour, turning once or twice.
  2. Dispose of the marinade and thread the shrimp onto skewers or place in a shallow, metal grilling basket.
  3. Heat grill to medium and cook the shrimp or shrimp kebobs with lemon wedges until the shrimp is opaque and the lemon wedges are slightly browned, about eight (8) minutes.
  4. Serve atop a salad of fresh greens from your organic garden or with couscous, polenta, rice pilaf or quinoa tossed with finely chopped, cooked vegetables.
  5. Sprinkle with feta cheese and parsley. Serves 6.
