Recipe for Fresh Green Beans

Fasolakia Fresca is sure to become a favorite, and an alternative to the traditional green bean casserole during the holidays.

Use as many fresh, local and organic ingredients as you can, when making this recipe.

Ingredients

2 pounds Fresh Green Beans

1/2 cup Olive Oil

1/3 cup Butter

2 medium Onions, thinly sliced

16 oz. Tomatoes (fresh or canned)

2 Tbsp. Tomato Paste

1 cup Water

1/2 cup Parsley, chopped

1 tsp. Sugar

Salt & Pepper to taste

Directions

  1. Wash and cut the green beans and drain.
  2. In a deep skillet, heat the olive oil and butter; saute onions until soft.
  3. Add the tomatoes, tomato paste, water, parsley, sugar, salt and pepper; bring to a boil.
  4. Add the green beans; cover and cook over medium heat until beans are tender.
  5. As an option, you can add carrots and/or potatoes.

Serves 6-8
