Ingredients
2 pounds Fresh Green Beans
1/2 cup Olive Oil
1/3 cup Butter
2 medium Onions, thinly sliced
16 oz. Tomatoes (fresh or canned)
2 Tbsp. Tomato Paste
1 cup Water
1/2 cup Parsley, chopped
1 tsp. Sugar
Salt & Pepper to taste
Directions
- Wash and cut the green beans and drain.
- In a deep skillet, heat the olive oil and butter; saute onions until soft.
- Add the tomatoes, tomato paste, water, parsley, sugar, salt and pepper; bring to a boil.
- Add the green beans; cover and cook over medium heat until beans are tender.
- As an option, you can add carrots and/or potatoes.
