Recipe for Pizza Sauce

Simple tomato-herb pizza sauce made with canned tomatoes.
Active Time: 10 minutes
Total Time: 1 hour
Ingredients
1 28 ounce can whole peeled tomatoes
1 tablespoon finely sliced fresh thyme or majoram (or 1 teaspoon dried)
large pinch dried chili flakes (to taste)
1 tablespoon olive oil
Directions
- Drain juice from tomatoes into saucepan and bring to a boil. Lower heat to maintain a very slow simmer. Reduce until juice has a jam-like consistency, this will take 45 minutes to an hour.
- Remove pan from heat and stir in the herbs and chili flakes. Let cool.
- Add tomatoes and chop with a spoon. Use an immersion blender for a finer texture. Stir in olive oil.
- Makes enough for two 9" x 13" pizzas.
