Recipe for Pizza Sauce

Simple tomato-herb pizza sauce made with canned tomatoes.

Active Time: 10 minutes
Total Time: 1 hour

Ingredients

1 28 ounce can whole peeled tomatoes
1 tablespoon finely sliced fresh thyme or majoram (or 1 teaspoon dried)
large pinch dried chili flakes (to taste)
1 tablespoon olive oil

Directions

  1. Drain juice from tomatoes into saucepan and bring to a boil. Lower heat to maintain a very slow simmer. Reduce until juice has a jam-like consistency, this will take 45 minutes to an hour.
  2. Remove pan from heat and stir in the herbs and chili flakes. Let cool.
  3. Add tomatoes and chop with a spoon. Use an immersion blender for a finer texture. Stir in olive oil.
  4. Makes enough for two 9" x 13" pizzas.
