Recipe for Watermelon & Feta Cheese Salad

Our family loves this Greek salad; it's a summertime favorite!

This delicious and refreshing watermelon salad is served with paper-thin slices of red onion and crumbled feta cheese with a touch of balsamic vinegar. It makes a refreshing summertime addition to any buffet, picnic, BBQ or light meal.

Ingredients

Per serving:
• 3/4 - 1 cup of cold watermelon, cubed
• 1/4 cup of feta cheese, crumbled or cubed
• 1/4 medium red onion, cut in paper-thin slices
• 1/4 teaspoon of balsamic vinegar

Directions

Place the watermelon in the salad bowl you will serve it in (chilled, if possible). Top the watermelon cubes with most of the thinly sliced onions, then the crumbled feta cheese. Place the remaining onions on top. Sprinkle with the balsamic vinegar and serve chilled. You can make this recipe in individual servings or multiplied and served in a large salad bowl.

This salad is even better if you add sliced olives and freshly chopped mint to it.
