Soba Noodles - Quick, nutritious & delicious

Hakubaku makes my favorite organic soba and udon -- they've got a really helpful and informative website with great recipes and information. I can't do much better than their website -- here are some basic facts:

- Soba noodles are thin Japanese noodles about the size of spaghetti
- They are made of buckwheat flour (soba-ko) and wheat flour (komugi-ko).

The most basic soba dish is zaru soba in which boiled, cold soba noodles are eaten with a soya based dipping sauce (tsuyu)

Buckwheat is good for you!
* Buckwheat is very high in protein which has all of the amino acids essential for good health.
* Buckwheat protein has also been shown to reduce cholesterol levels.
* Buckwheat may have some value for diabetics in reducing blood glucose levels
* Buckwheat is a naturally high in dietary fibre
* Buckwheat is naturally high in lecithin

Buckwheat is also gluten free, but as anyone with Celiac already knows, it's imperative to read the label. Most varieties of soba noodles also contain wheat. more »
