St. Pat Organic Cheese

This stuff was great. It had a mild, yet subtly appealing taste. The only downside to this stuff is--like most good cheeses [and typically most good (organic) things]--that it is expensive. The nettle wrapping added an interesting nuance to it, though I'm not sure how much added in the total experience.

yeeeehawwwwww!

now, i love me some cheese. i would even call myself a connoisseur. that's right, i am.

cowgirl creamery is high on their horse, which is how it should be. they get it right every time. this cheese seems subtle at first bite, until you realize the depth of flavor that follows a few chews in. there's even a note of honey. it's also wrapped in nettles!!!!

With wine or without, this is a terrific cheese

While my most recent tasting of these cheese was sans wine, it takes only a tap of the old cabeza to remember Winter, 2007, wine uncorked, fire blazing, rain pounding the ceiling--and the first seductive bite of this subtle beauty. Yes, we would flirt until dinner, with me smoothing knifefuls on a water cracker and deliciously entertaining my new friend--following that up with a swallowful of Pinot. We have a word for this: Delight! And St. Pat, while perhaps less mysterious without the glass of wine--and not quite as flirtatious--was a fine companion on this recent afternoon of snacking, one I would gladly welcome to my mouth again.

obscenely tasty

"I've fine-ly found the cheese. Of a lifeti-i-ime. A cheese to last my who-ole life through." And this is it! This is a very tasty soft cheese, which spreads nicely on a cracker at room temperature. I wish I words could do justice to the taste...it was Earthy, but not in your typical pungent/moldy type of way. It was kind of refreshing.

The perfect all-pleasing cheese.

This nettle-wrapped cow's milk cheese is flavorful without being overwhelming. The texture was perfectly creamy and the nettle rind added a great mellow note. I loved the mild sweetness of the cheese.

subtle, creamy & yummy

This cheese is made locally to me, in Point Reyes CA. They use milk from the Strauss family creamery in the cheese which is certified organic, so the cheese is organic. It's a soft cheese, and I found it to be very tasty. It was very subtle, buttery, not sweet, no overwhelming aroma. For folks who like weaker cheese (like me), this is a great one.
