Beets are one of "those" vegetables that damaged many folks as children -- fleeing childhood memories of overly sour, rubbery pickled beets or badly made borscht, many of my cohorts cringe at mention of the word and refuse to entertain eating beets of any sort.
Tragic to say the least -- a well made borscht tastes incredible, and properly pickled beets are a joy. Fresh beats, steamed or grilled, are tasty, tender and delicious. Beets are sweet, like carrots, and very nutritious.
Beets are gracing the tables of "high end" restaurants all over the bay area in salads, purees, sauces and small plates. What are you waiting for - get cooking!

Beets contain high amounts of vitamin C. They are also high in folate, soluble and insoluble dietary fibre and antioxidants. Also, according to Wikipedia, "Beetroots are rich in the nutrient betaine. Betaine supplements, manufactured as a byproduct of sugar beet processing, are prescribed to lower potentially toxic levels of homocysteine (Hcy), a naturally occurring amino acid that can be harmful to blood vessels thereby contributing to the development of heart disease, stroke, and peripheral vascular disease." I love them for their bright color, sweet taste, and unmistakeable soft and tender texture. They are delicious with spinach and goat cheese, and a bowl full of borshct is always a treat. The beet is definitely on.
