Tasty egg-less salad

Egg salad is such an easy, convenient food for those who can stomach the cruelty of the agricultural industry. Yes, I know there are free range chicken eggs to be had, but none will be free until all will be free!

Plus, I'm allergic to eggs, so that makes me completely vegan. I guess what I always liked best about egg salad was the creamy combination of mustard and mayo, with bits of onion and paprika.

Sweet Earth Natural Foods makes a pretty good tofu salad -- it's got the right ingredients, though I'm not a big fan of all the big shreds of carrot. I'd rather get the bulk eggless salad available in the Whole Foods deli case, but this works in a pinch for a good sandwich on a roadtrip -- goodness knows there's nothing to eat on the road for vegans in most parts of California, much less the rest of the US and you can only eat french fries and scrape cheese off of salads just so often.

If you happen to be heading north on 101 toward Mendo, you can always find this salad at Mariposa Market in Willits (it's on the west side of the road just north of the railroad tracks -- don't get sucked into the Safeway plaza! And watch out for Fish & Wildlife, they can give speeding tickets).
