Parchment paper with a passport

Trying to live a green, healthy & sustainable life means making some difficult choices. It takes a long time to run through a roll of parchment paper (which should go into your composting bin once you've used it). Replacing my parchment paper on a grocery trip at Whole Foods meant I had the option to purchase unbleached, chlorine free parchment paper. This made me very happy - though flying it from Sweden seems to offset any benefit to the more sustainable production process.

For those who don't use parchment paper, I want to tell you that it is truly a wonder. It is far superior to greasing and flouring a pan for cakes. Oil is optional -- you don't even have to do it. For a shortbread crust, I usually lightly oil a pan, cut parchment paper to fit and then press it down with lightly oiled fingertips.

You'll find that your cakes turn out of the pan perfectly every time. You'll just be able to peel the paper off (while the cake is still slightly warm) and you'll never have to triage cake chunks back into the cake with frosting (not that it tastes any differently, of course).

Parchment paper is also perfect for making dipped chocolate goodies, other uses:
* cut to fit your bread pan, let the bread rise and bake it
* place parchment paper under your pizza dough to make it easier to transfer to and from the pizza stone
* use parchment on the grill to keep a bit more moisture in your meats or veggies (search "en papillote" for folding instructions)
* use parchment paper in the oven to poach fish (again "en papillote")

eco-friendly parchment paper

Made from unbleached paper, I guess this parchment is made by a company in Sweden. No chlorine is used. It definitely works great, like a regular parchment paper, only it's green! Well, kind of green. It's flown in from Sweden and that's a lot of miles...
