Easy & Tasty Cupcake Recipes

It took me months to actually use this cookbook -- I was a bit intimidated by the heavy reliance on soy products. After one of the writers responded to my e-mail, I plunged in, substituting canola shortening for soy margarine and almond milk for soy milk. The recipes are pretty easy and the photography is beautiful and very inspiring.

You might want to pick up an inexpensive pastry bag for piping frosting for prettier (but not better tasting!) results.
